Belgian Waffle Batter
Belgian Waffle Batter :
Serves : 4-6 people
Prep Time : 10 minutes
Cook Time : 1 hour 30 minutes
Ingredients :
1 1/2 teaspoons Dry Instant Yeast
1/4 cup lukewarm water
¼ cup sugar
2 cups All Purpose Flour, sifted
1 Tablespoon of ground cereal grains (oatmeal, farro or flax seed)
3 cups buttermilk or whole milk
3 large eggs
1 teaspoon salt
2 teaspoons vanilla
¾ cup melted butter
instructions :
Add yeast in lukewarm water with sugar and let rehydrate for 10 min
Whisk in Milk and Eggs into bowl and sift in dry ingredients
Add melted butter and stir until smooth cover with damp towel and let rest for 1 hour
For Fluffy Waffles separate eggs and add yolks with butter and whip egg whites separately into stiff peaks
Fold in whites in two additions
Heat waffle iron to medium heat and with pan spray spray both sides
Add batter and cook according to waffle maker instructions
Top with Rhubarb Compote and Whipped Cream
