Ingredients :

1-2 Beef Hearts, 4-5 pounds

1/4 cup Minced Shallots

1 Tablespoon Minced Capers

1 Tablespoon Parsley and Chives

1 Tablespoon Dijon Mustard

2 Tablespoon of good Olive Oil

1 teaspoon Lemon Juice

1 teaspoon Red Wine Vinegar

1/2 teaspoon Chili Flake of your choice, something smoky

Sea Salt and Cracked Black Pepper

1 egg yolk, optional

Handful of Edible Flowers or Alfalfa Flowers for garnish

INSTRUCTIONS :

  1. Trim the heart of sinew and gristle, and cut into small chunks

  2. Chop finely with two knives or with a meat grinder on a 1/4 inch dye

  3. Chill thoroughly

  4. In a mixing bowl mix ingredients and taste and adjust salt

  5. Add Egg Yolk for creaminess

  6. Serve with crackers and garnish
