Sweet & Sour Citrus Pork

Cut: All pork chops come from the loin of the pig. The loin runs from the hip to the shoulder just below the back on a pig.
Ingredients
2 pounds Five Marys pork loin chops
2 tablespoons olive oil
Salt and pepper to taste
1/2 medium onion, diced
3 cloves garlic, chopped
For the sweet and sour sauce
1/2 cup Thai-style sweet chili sauce
1/4 cup rice vinegar
1-2 teaspoons samboi or sriracha sauce (optional)
Juice of two mandarin oranges
1 teaspoon cornstarch
1/4 cup water
For garnish
1/2 cup cilantro, chopped
Instructions
Thinly slice the pork and stir fry it in olive oil, salt, and pepper over medium-high heat until it begins to caramelize. Remove from pan.
Add onions and garlic to the pan. Stir fry for 1-2 minutes.
Mix all sauce ingredients together except for the cornstarch and water.
Pour the sauce mixture into the garlic and onions. Reduce the heat to medium.
Stir the cornstarch and water together and add to the pan. Simmer 4-5 minutes until the sauce is slightly thickened and glossy.
Add the pork back to the pan. Taste for seasoning.
Serve with jasmine rice and chopped cilantro.
